I'm getting really serious about getting a recumbent tike, and the ones that I am looking at have a more drastic recline that does the recumbent bike that I am riding now. I see that some of them have head rests. Is that because these bikes hurt your neck on long rides? Should I stick with trikes that have me sitting more upright?

No neck pain while riding my recumbent. You're sitting in a natural position, like you do in your recliner in front of your TV. But, you might have a pain or two in your legs, until you get used to the new way of pedaling.

I'm on a Greenspeed GTO and have 8500 miles logged...............NO pain whatsoever.
Just keep peddlin' You will get your bent legs in time. I'm only at 150 miles but getting better and stronger every day. I can get the legs a bit sore if I do a longer ride and push it quite hard to where the heart rate is up and I'm breathing heavy. Fine by the next day though.

I've got a Catrike Speed and that is very reclined 37 degrees. I've had it a year now and I haven't had any neck problems and I've put some serious miles on it too. I'm also 54 years old, if that would have anything to do with it. Go for it, there is an adjustment period though.
