I'm running these tubes on 26 X 2.1 tires on my MTB. What pressure should I fill it up to ?

Tire pressure depends on a few variables (specific tire, your weight, terrain, etc.) and basically is personal preference. Try 40 psi to start and go up or down as you like from there...

I'll second that advice. I run around 35 when it's wet, closer to 40 when it's dry. Make sure your suspension sag is set, air the tires to 40 and go ride. If it feels good leave it there, mushy put some in, springy take some out. Repeat as often as you can.
