later today I'm gonna try my hand at installing a new adjustable cup/cone bottom bracket. i've read up on it a little, but I don't really understand how you tell exactly how to adjust the adjustable cup. how do you know when it's in far enough or too far? and how much grease should i use on the bearings? any help on this would be much appreciated.

Almost everybody uses way more grease than is necessary. The good news is that grease is cheap and too much doesn't hurt anything so have at it.

If your bearing preload is too loose, you will be able to move the spindle in and out of the bottom bracket shell. If your bearing preload is too tight, you will feel a drag when you turn the spindle with your fingers. Dabble with it until you find the "sweet spot" between the two, tighten your locknut, then test it again. It will probably take a couple of tries before you get it right.
