I have this bike- http://www.giant-bicycles.com/en-US/bikes/mountain/1260/29299/

I recently put some Semi-Slicks on it and it rides fantastic. Road and light sand trails AKA our Eastern trails is what I do most of the time. However, there are times on the drop of the hat I like to do some good offroading. I don't have all the time in the world as it's a pain to change to my mountain bike tires front and back.... With that said I am looking to get new wheels so I can do a quick change and go....The problem is my bike has disc brakes. Does anyone know the best way to go about this?? My Semi slicks are 26"x1.95 and my mountain bike tires are 26"x2.10 What kinda rims, disc brakes should I look for. Keep in mind I have been only riding since beginning of last winter so I am pretty new at this. I have gotten fairly quick at changing my tires out but off roading I can make a quick decision to go.. Any help would be greatly appreciated
