Road Cycling - How do I know if I'm eating too much (or not enough?)

I am getting close to my MS150 ride (sept 18th) and I am worried about my weight. I am trying to eat well and have read books on pre-pride and post-ride recovery eating but it seems that I am not losing much weght. I dont weigh myself as that seem inaccurate so how do I know how much to eat?
I ride 6 days a week, this month will be base miles so 5 of those days are 2hr, 30 miles rides with a 4-6 hr ride on the 6th day. Next month I start sprints and intervals with some long rides. I just want to be in great shape for this ride as its my first one, I know its not a race, but I would like to be up front. I am currently about 190lbs and I am 5'9"
