I own a B&B and there are 6 men who are doing a fund-raiser for a veteran's memorial by biking from the Superior/Duluth area down to the LaCrosse (WI) area. They are staying here tonight. I am feeding them supper and breakfast. I have gotten very little information from the group organizing this (they are not bicyclers) except to say pasta would be good tonight, and tomorrow just something light...fruit...
So what should I feed them? I am under the assumption they will have ridden 100 miles today +/-. I need to have it ready when they get here, so I can't ask THEM what they want. Would beef stroganoff (over egg noodles) be too heavy? Salad with it? Green beans (fresh from my garden)? HELP...
And tomorrow, would oatmeal, fruit and yogurt with granola on top, and coffee/juice/milk (their choice) be a good meal before they start out on the bikes again?

Stay away from beef or heavy cream and/or cheeses if they are riding tomorrow. Pasta, fresh tomato sauce with various veggies, maybe grilled fish or chicken on top. Good salad nicoise. Breakfast sounds fine, or could add toast, pancakes, waffles, whatever with lots of fruit, juice, etc.

Well, the beef I have in the oven will be my lunch tomorrow, I guess! :-)
I will do up some chicken instead and serve that over pasta with red sauce. Will do green beans, potatoes, and a big salad with tomatoes, carrots and cukes.

The salad will work but may give some of the cyclists the runs. I know that if they are cycling for the day they will be willing to eat just about anything but keep in mind that not everyone can handle tomatoes or tomato based products so put the sauce on the side. You are good for asking the question and taking care of them.

Well, I took your advice(s) and served rotini noodles with an olive oil and herbs seasoning, made a red sauce with sun-dried tomatoes, onions and mushrooms, and roasted a chicken and served the sliced chicken meat separately. Also made a big salad with lettuce, tomatoes and cucumbers (with three choices of bottled dressings) and a bowl of strawberries, blueberries and peaches cut up and drizzled with honey. They ate well and because I served these things all separately, those who wanted meat could add it to their plate, those who wanted red sauce could add it, and those who wanted just pasta and fruit could have that.
The next a.m. I served muffins, oatmeal, yogurt and granola, and cantaloupe, along with OJ. I think they all were fine with everything I did. So thank you!!!
