Mountain Biking - Buying new fork and stems. Need help with ergonomics

I really like to cycle for a few hours each day. The problem is i always have back pain. Its probably because i have to bend a lot as my handlebar is a bit low and stem is a bit long xD

So im now going to buy a new fork and stem. I will have to ask a few questions.

1) My XC hard tail bike has 80 mm fork now. Shall i buy a 100mm fork so that i will be a bit more upright position? But that will effect handling and steering, i cant decide.

2) When i buy the new fork, i will have to cut the excessive steering tube. What would happen if i cut it a bit longer than my current fork steering tube? I will then put a few spacers, raise the stem and raise the handlebar. Will this affect handling and steering? Or do i just cut the steering tube same with my current fork tube length and buy a stem with more angle?

Why are you buying a new fork? Just to get the front end higher or is there another purpose?

never, because i bought a new frame which is black. And my fork is WHITE. Thats why.

Black and white work together so what's the issue?

When it comes to pain and seating position, make one change at a time so you know what works. See if you can borrow some stems or higher rise bars from your LBS to figure out what feels better.
