Anyone want to suggest a paved rail trail and is well signed or mostly contiguous where I can rack up 50 - 100 miles
Northeast - where else can I rack up 50-100 miles on a paved trail?

Hmm ... interesting. I grew up in the Bronx and Yonkers and was down in White Plains Tuesday and Purchase due to a funeral.

Anyone know what's involved in getting to the Putnam/North County trail from the Bear Mountain Bridge? Can I ride there on 6 or not safe?

The section east of Peekskill has traffic doing 50mph+ on a 2 lane road with no or disappearing shoulders. The section heading south from the bridge, up and around Anthoney's Nose, is a very narrow, twisty 2 lane road, very scenic, with a ton of traffic and steep hills. Perfect for riding, if it were closed to cars. With auto's following you up the hill it would be tense.
In truth, there's no great route that I would recommend, except maybe north to Cold Spring, then east on 301 and down to Carmel. Assuming you want some sort of loop, what do you do then ?, as you still need to get back to the bridge from the south ?.
It might be less trouble to park somewhere in Westchester near the path.

I was thinking about a century-sized loop starting around the GWB, up to Bear Mountain and the majority of the return on the County Trailways.

just found out today that a high school friend lives in Yorktown 9 miles from the parking in Somers / Carmel. even more reason to try it. if I do, I'll give you guys a shout-out. my bike situation is up in the air. my main bike needs crank teaking and a new rear cog, plus I have new tires to mount. my older bike (but faster) is a little creaky but did 55 miles yesterday no problem. swapped the pdeals but that wasn't it. gonna try checking the tension on the drive side crank now.

You can get on the trail in the Yorktown Heights commercial district. You should be able to find parking around there, or if he lives close by just park at his house and ride over to the trail.
