This past weekend I rode 70 miles climbing 6200ft in 6hr32min (5hr43min moving time) -- http://connect.garmin.com/activity/10901857.
Given that, am I able to do a century ride to Santa Cruz (100 miles round-trip) in 1 day?

Yep, if you can hit 70, you'll be fine. In fact, if you can do over 50, you can probably do a century.

I was gonna say if you can do 80, you can do 100. So 70 with some elevation counts just the same. Go for it.

Your ready don't worry about it.
Figure it like this,all you have to do now is add an easy training ride to what you just did.No big deal,I mean heck anybody can do an easy training ride right.

My usual rule is that if I can do 100k and "feel reasonably good" at the end, then 100 miles is doable.

The only way to know for sure is to just get on your bike and ride 100 miles. I suspect you'll do fine.
