I work a desk job and dont tend to use up a lot of calories there, so after work I like to head out and get in a good 2-3 hours of solid riding in.
Wondering if chowing a bigger lunch will give me enough fuel, or if I should stick to the chicken salads for lunch and horf down a bagel before I head out the door, which is what I'm currently doing.

I would assume everyone is different. Perhaps you should try both and see what works for you.
For me I would stick to what you are doing and replace the bagel with something else like a banana and fig newtons.

Keep the lunch size down. About 2.5 hours before you plan on getting in the saddle, have about 300 calories of mixed carbs, protein, and a little fat. That would be about a sandwich. I use a mix of peanuts, raisins, and M&Ms, just because I keep a jar of it for hiking. Then nothing until you get on the bike, when you can start with a few swallows of a sports drink, a gel, something like that. Fig newtons/banana are good, but might burn too fast for the mid afternoon snack. Use them on the bike.
