how much grease should i pack in. i know too much is better than not enough but how much should i put in like around the bearings and within the hub itself where the axle goes. do i want no air in it at all?

Just make sure the bearings are covered. Also, when putting it back together, make sure all the bearings are in place.

Cover everything is a good rule. If you put too much in some will squeeze its way out.
