You "fresh only" people - freeze, we don't want to hear from you.
"Local Only" people - can it unless they are locally frozen or canned.
How do you like your veggies? Canned or Frozen. I like canned. Canned spinach cooked up with a beef bouillion cube. Canned peas, the mushier the better. Can of corn, though - I prefer a Texas Leaguer.

I vote for both..
HA - fresh! However, I have a bunch of frozen in my fridge - easy lunch to pop a bag into my back pack and nuke them at work. Was brought up on canned veggies - not real crazy about, but then my Mom ONLY cooked peas or corn, ever.

Frozen.....frozen are "flash frozen" and much closer to fresh.
That being said...neither taste quite as good as true fresh veggies. They both tend to be mushy or get mushy when you cook them much more easily.
I prefer frozen, and I steam them until they are crisp, not soggy. I did recently read a study that steaming also unlocks more of the beta carotenes in veggies.

I think I just threw up in my mouth a little... tinned peas are the work of satan.
Growing up I ate a lot of home canned vegetables and we had a giant root cellar which are completely different from tinned vegetables.
