I have heard numerous good things about R&E cycles and their Rodriguez custom bikes. I'm not quite ready to purchase one myself, but have enjoyed poking through their catalog (http://www.rodbikes.com/catalog/catalog-09-high-res.pdf).
One thing that struck me, while most all aspects of fit are custom made - the component choices seem somewhat constrained.
Specifically things like saddles. and wheel parts seem fairly narrow across all their models. Are components they list just starting points, or is that how it is?
Basically if someone gets a custom frame made, but wants a Brooks saddle, Nitto bars and wheels with Shimano hubs, is the shop going to refuse or attempt to dissuade?
I ask because I've always envisioned a custom bike, being completely custom down to every component of my choosing. Again, I've heard great things about the shop and their bikes, and don't claim to know better - just wondering about their build specs.
