I usually swim once a week early on Sunday mornings in the "off season" Dec- thru Feb in Western Oregon. I normally stick with the side stoke and breast stroke and throw in a few crawl laps. I do not use swims to improve my bike performance but as a cross training regimen to keep my fitness level high. I tend to focus on abdominal and back exercises to help my ride strength. I think best back and general upper body exercises are pull ups and chin ups.
