Apparently it was a project bike commissioned by Shimano to highlight their Alfine group. I believe that white was chosen so that the components had a contrasting background. I'm pretty sure if someone wanted something similar, Sam could paint it any color (colour) you like, including merely adding an accent color.
I'm really more of a roadie, but anything this elegant just grabs my attention.

'sweetest bike ever' is a statement kinda like 'most attractive woman ever' or 'best beer ever'.
It's all about taste
and I don't think it can be called the sweetest commuter ever, it doesn't even have fenders.

I'm huge on fenders. It also reminds me of some of the other ideas that people either loved or hated (can you say Celeste??)
Personally I think it's kind of groovy. I like the different look. Nice bits and wood. Not sure if it would hold up as an urban assault daily commuter, though.
Heck, If I had the money I'd buy it and hang it on the wall and just stare at it.:D

i like the white bike except for the fork. it's too angular where it meets with the head tube. the rest of the bike is nice and flowy, and then all those right angles go and eff it up.

oh, my apologies, indeed it does. Still without drops it is useless for me, nice ride though!
Given how much this bike would likely cost, I wouldn't be riding it in the rain; but I guess if "sweetest" also encompasses utility, then sure, the bike lacks.
But with the detail work, and the amount of thought that went into this bike, it is (IMO) a work of art, and therefore, very sweet.
Details that I think are sweet:
Cable Routing
Disc Brake Mounts (something so simple, yet beautiful)
Wooden Rims
Hand Forged Rear Rack with Wood Platform
Hand Forged Detail Accents
Wooden Grip Mounts
General Lines of the Bike (Top Tube flows into Seat Stays - Trim piece between Top Tube and Seat Tube flows into the rack brace)
Stem/Headlight Integration

I'm with you mostly, all my commuting is done on either:
Litespeed Vortex
Trek Madone 5.9
Redline Conquest Pro Disc
As a bike head, I just really like the aesthetic of this (Naked Cycles) commuter. If I had a dedicated tooling around town bike, it would be something like this one. My commute is very short, and I don't need my race bikes every day.
The pedals are obviously one-off, hand made.

Interesting pattern on them, possibly some kind of clipless on the other side?
I like it from the artistic stand point but I could not commute on that regularly. It would be too slow and no drops would suck.
It would be fun putting around with the wife and kids at the beach.

I have been thinking this is the sweetest commuter bike ever as it is too ugly to steal, the drive is as simple as it gets, it eats potholes, can jump curbs, and even worked well for last week's polo matches.
I don't care if it gets scratched and will take it out in any kind of weather... especially when it's freezing, slushy, or wet.
It only cost a few hundred dollars to build up, is very comfortable, and there is a reason I call it my U.A.V.

Not that your bike is ugly enough, especially compared to mine. But your description definitely sums up what a commuter bike should be.
In terms of elegance, I have yet to see anything that compares to the road bikes of the @70s.

I actually had the chance to see the bike in person at one of our local bike shops. The attention to detail was absolutely amazing. And I guess I'd like to state, I don't think it's the best nor most practical commuter ever; too expensive and beautiful for that. But if I had the money, that would be one sweet bike to pop into work on a couple of days a week.

It's a pretty bike and would be okay for a 3-mile commute in fair weather. Personally, it's not for me though. My ideal commuter bike is something I can ride 40 miles every day, in all weather, year round. It should fit me like a glove, be able to carry 30 lbs of stuff, and be fast too. Oh, and require little maintenance. I have two bikes that pretty much fit these qualities except for the low maintenance part. I still need to clean and lube them after a few days of riding in the rain or snow. A light touring bike with drop bars, brifters, IGH and disc brakes would be my ideal.

My perfect commuter comes with a step through frame, relaxed riding position, beautiful panniers, an IGH and generator, full chain case and the most beautiful woman I have ever seen.
She likes wearing dresses too.
