ok, so they get 2 rest days. what do they do? do they get treatment? do they just lay around drinking beer with their team?

Treatment, training, obligations vis-a-vis sponsors, and where possible some relaxation.

They ride. About 2-3 hours. You cannot stay off the bike at this point as the body has adapted to the rigors of the daily riding regimen...racing is not like training rides. So, yesterday for example, they will rode about three hours in the mounitains, maybe doing 2-3 cat 2 to 3 level climbs so the body does not shut down.
Then they will get injuries worked on, other obligations, but a lot of rest time and eating to help the body recoup.
