Singlespeed & Fixed Gear - Help a newbie out!

I recently bought a mid-70's Raleigh Pro and am going to build a fixie but know little to nothing about building bikes. I have decided to purchase a new wheelset instead of attempting to use the old, heavy wheels. I don't want to break the bank but also want quality components. Any suggestions on wheelsets and anything else I should purchase/use?

Unless it isn't functional, the bike is probably one you can sell and just buy a complete fixed gear for less.
If you do convert, what is your budget for wheels?

I have realized I could probably purchase for less but I want to build this bike. I like the older bikes for fixies. I don't really have a budget and am willing to buy good wheels. I have been told by some to stay away from Weinman rims and purchase Velocity but don't know anything about either. And thanks to those that replied with help.
