Touring - Recommend a new shimano cassette for my Miyata 610?

I've got a 1983 Miyata 610 touring bike which I've been working on for a couple of months.

My next big upgrade I just invested in is a 700c wheelset, shimano ultegras laced to 36h open pros. I know, not really "proper" touring wheels, but I don't plan on doing fully-loaded touring and I weigh around 135lb.

With that said, I was wondering if anyone could recommend a Shimano cassette for the new wheels that will work well with my current Suntour derailleurs. I have the original suntour mountech in the front, with the original triple chainrings, and I've replaced the faulty mountech rear derailleur with a Cylone Mark II long cage.

I think the original suntour cassette is 5-speed (14-28).

I was thinking of going with an 8-speed to avoid shifting/alignment issues.

Any recommendations would be highly appreciated!

What are you going to use for shifters? I don`t know you`ll be able to get any Shimano shifters to index with a higher sprocket count (more sprockets = more finickier), but I did use S.T. indexed shifters and derailler on a 7-speed Shimano HG freewheel for a while. Now I`ve got the same S.T. derailler with Shimano shifters and freewheel and it indexes like that, too. And you can always run whatever friction shifters with whatever derailler, of course. You can check the max sprocket size for your particular Cyclone at Disraeligears- it looks like the GT models (Suntour`s designation for long cage) mostly go to 32t max sprocket and 36t takeup.

Did you have any issues with your brakes when you switched to 700 wheels? Did you have to install new calipers, or did the old ones reach ok ?
