Road Cycling - Moving to Missouri, where to ride?

I'll be moving to Missouri in a couple of months.
Was excited about all the hills I saw but,
was really bummed when I saw how fast people drive
in the country.
Worried about vehicles going 60-70 up a hill not knowing
whether a cyclist or even a broken down vehicle might be
in the middle of the road. :(
Where in Missouri?
There's a big mix of rural and urban/suburban here.
I live in St. Louis and commute 3-5 times a week and do exercise/recreational rides during the weekend. I generally insist on starting all my rides from my home in the suburbs of the city, and have mapped out a number of places to ride to. I even hope to start a multi-day tour from my house and connect to the Katy Trail, going all the way to the other end of the state. Also there are plenty of devoted racers and club riders, too.
And some good MTB trails such as the Chubb Trail, Castlewood State Park, Weldon Springs, etc.
So, where ya at?

There is always Illinois :) If you hop across the river at the JB bridge, there are lots of great back roads around Columbia/Waterloo/Millstadt
My wife who is working in O'Fallon is looking for a place for us while i'm still in Florida.
We're thinking Lincoln or Warren county, maybe Pike.

O'Fallon Missouri? That's a little west of me, across the Missouri River in St. Charles County. Sub-urban sprawl. I'm not all that familiar with Warren, Lincoln, or Pike counties. Check out these websites for local cycling information:

O'Fallon Illinois or O'Fallon Missouri? Either way you are not real far for St. Charles Missouri. Just northwest of St. Louis. The Katy Trail starts there it and run to Clinton Mo. It is a 225 mile trail. Some nice trails run along the Great River Road on the Illinois side of things.
