start with a fresh batch of reds:

use some hickory/mesquite chips:

After six hours (quarter-done):

After another six hours of smoking, followed by 12 hours in the oven at low heat with a cracked door; nice, supple, and leathery:

Sounds wonderful....but try something other than jalapenos...I just don't like the flavor on those. Poblanos would be good. Maybe even habeneros.

Very nice!
I did some in similar fashion a couple months ago, but I used oak and applewood smoker chips on the grill for about 3 hours and did the final drying on my dehydrator.

Smoked Jalepenos. I don't see where you put the little cigarettes but you can really see the results of too much smoking. Looks like smoker's lung.

Wow....just looked it up. You're right. I didn't realize a chipotle was specifically a jalapeno.

Particularly odd because I love chipotle, but don't much care for the flavor of jalapenos.

six hours using the original (black, Coleman date code 8/71), then swapped with a fresh red one (Coleman date code 1/84) = 12 hours of smoking, baby!

btw, KT, habeneros are in right now at $1 per quart over at the Mustang market (where i got the grill for $5, the smoker/oven for $3, and the reds for $1)

btw, here's din-din using the jalapenos (cubanelles stuffed w/slow-cooked Boston Butt pork and jack, cheddar, and asadero cheese, then topped with diced tomatoes and two chopped (scissored) smoked jalapenos):
