Namesake recipe, aka "Buttermilk Apple Cake".

I was going to post this in Women's, but I thought the guys would like it too.

• 1/4 c. soft margarine
• 2/3 c. packed brown sugar
• 1 1/2 c. buttermilk
• 1 c. all purpose flour
• 1 c. whole wheat flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tbsp cinnamon
• 1/2 tsp salt
• 2 medium apples, cored and finely chopped, ~ 2 1/2 c. (I leave the skins on for more fiber. coasting, you may peel them as you reportedly have enough :D.)
• Optional: flax, wheat germ

Beat together margarine and sugar until combined; beat in buttermilk. Add flours, baking powder, baking soda, cinnamon, salt, and apples; mix until combined. Spread evenly in 8-9" square pan or 2-2.5 L bundt tin.

Topping: Combine 1/4 c. brown sugar with 2 tsp cinnamon and 2 tbsp chopped nuts or 1/4 c. coconut. Sprinkle over batter. Bake 350 F for 40-45 min until toothpick comes out clean. (I have to bake the hell out of it, usually takes at least an hour in my crappy oven.)

As made above, contains approx 200 cals per piece, 5 g fat, 170 mg sodium, 4 g protein, 35 g carbs. (Comes from a "heart-healthy" recipe book.) Am currently experimenting with substituting some canola oil for margarine and yogurt for buttermilk.

Makes 12 servings, or a snack for KT.

Sometimes I put nutmeg in it, but I'm not a big nutmeg fan.

I'd mail you some but I don't think it would make it past Customs...they're pretty hungry.

This recipe is from a Pillsbury Bakeoff contest many years ago. It is absolutely delicious. I have made it for brunch and it is very popular.



Raspberry Cream Cheese Coffee Cake

Ingredients
2 1/2 cups all-purpose or unbleached flour
3/4 cup sugar
3/4 cup Darigold Butter
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup Darigold Sour Cream
1 egg
1 teaspoon almond extract
8 oz. pkg cream cheese, softened
1/4 cup sugar
1 egg
1/2 cup raspberry preserves
1/2 cup sliced almonds
Instructions
Heat oven to 350°F. Grease and flour bottom and sides of 9 or 10-inch spring form pan. Lightly spoon flour into measuring cup; level off. In large bowl, combine flour and 3/4 cup sugar. Using pastry blender or fork, cut in butter until mixture resembles coarse crumbs. Reserve 1 cup crumb mixture. To remaining crumb mixture add baking powder, baking soda, salt, sour cream, 1 egg and almond extract; blend well. Spread batter over bottom and 2 inches up sides of prepared pan. (Batter should be about 1/4-inch thick on sides.) In small bowl, combine cream cheese, 1/4 cup sugar and 1 egg; blend well. Pour over batter in pan. Carefully spoon preserves evenly over cheese filling. In small bowl, combine 1 cup reserved crumb mixture and sliced almonds. Sprinkle over top. Bake at 350°F for 45 to 55 minutes or until cream cheese filling is set and crust is deep golden brown. Cool 15 minutes. Remove sides of pan. Serve warm or cool; cut into wedges. Refrigerate leftovers.

Makes 16 servings.

Oh, and CC: don't post recipes only in the Women's forum. Many of us guys like to cook too and are very good at it. I love to see the recipes that people recommend and I don't have access to the Women's forum.

coffeecake: I have two dogs who start their day with a walk to the local corner bakery with me where I buy a single coffecake to split between them. Have done this evey day of their lives (7-8years) If I have to substitute a blueberry muffin or some other thing (no coffeecake that day) they will take a piece in theirs mouths, move it around, and spit it out. They are spoiled animals. I love them and they love coffeecake. First time I saw your name I thought of my dogs' daily habit.

Excellent thought. I had considered letting one of my female multiple personalities sign up as Ms. MillCreek, but I fear the mods have a limited understanding of MPD and would ban me as a sock puppet.

Or I could have Ms. MillCreek sign up as Ms. MillCreek, but there is that potential sock puppet again.

Hmmm. Ms. MillCreek 1.0, 2.0, 3.0 and all the fractional Ms. MillCreek's always used to complain that I made them fat because I cooked too well. I wisely kept my mouth shut when they would make such complaints, rather than offering an alternative theory as to the cause of any weight gain.

My recipe for Toast:

2 slices white bread.

Place in toaster oven, turn knob to "dark", push down "toast" button.

When bell rings, remove toast. Enjoy.

Not liking to cook dessert is a character flaw that shall not be found in any harem of mine, toots.
