How does one go about tilting the saddle up or down? The only adjustments I can easily see how to make is the fore/aft one. My seatpost has two bolts if that makes a difference.

Just loosen those two bolts quite a bit and give your saddle a nice solid whack and you'll see...

Depends on the seatpost. if the seatpost has two screws (fore and aft) then you losen one and tighten the other and that will change the angle.
If there is only ONE bolt then it kinda is like loosen it and whack it... But better is to loosen it enough to lift the seat (and the bracked part of the seatpost) so you don't screw up the splines on the post that grip and hold the angle...
