Not to derail this, but are there any particular "wider" rims that are favored for cross?

Fulcrum rims run wider, as do Bontrager from what I hear.

while the rims should fit a std road bike, you will likely have to change the tire to something 28 mm or even 25 mm.

FWIW, I just used my road training wheels as CX wheels: 32h Open Pros on Ultegra hubs. Bombproof.
