My bike originally came witha 6" rotor in back and 8" up front. Is it possible to throw on an 8" rotor in back as well?

Yup. You just need the 8" adapter for your caliper.
... and of course.. the new 8" rotor.

Make sure you have enough stay clearance to run the bigger rotor on the back. Look at you current rotor and imagine it extending another inch all the way around. Some frames may not have the room for the bigger rotor.
