I was craving some Cinnamon Toast Crunch this morning so I went to the store to get some. As I walked by the fruit section and saw some blueberries. Then I thought to myself, "Man, I wonder if blueberries and bananas would go well in a pancake". Well they do. In a glorious fantastic kind of way. This has made my day.

Anybody try any other additions to pancakes to make them even more delicious?

All I know is that a dollop of whipped cream on top enhances any pancake.

I'll bet strawberries would have been good on top also.

I always make bananananana pancakes - however I do add vanilla to the pancake mix - had it once at a restaurant and it was wonderful. However you can add too much vanilla. Add vanilla a half tsp at a time and taste batter. I over killed my last batch of pancakes with vanilla and was not crazy about them.

And I love when (if I add blueberries) they cook and sear on the griddle - like the frozen ones (thawed) for pancakes though. Picked my own wild ones while in the Adirondacks camping some years ago - and I use that time to rate my blueberries as they were small and absolutely, wonderfully tasty.

hehe - made the most unfortunate mistake of ordering blueberry pancakes at a small restaurant the last time I was out on a 5 day tour (everyone was ordering big breakfasts so hey why not carb up) - and so I forgot to even think about it as I always incorporate my fruit in with the pancakes at some point and so what do I get.

An IHOP pile of stuff on my plate - 3 pancakes covered with, I swear, a whole can of blueberry pie filling - and then a pile of whip cream that was bigger than two of my fists. I scraped all the crap off my pancakes and ate most of them (some were just drenched in the sugary pie filling liquid) with a little butter. ick. Let my guard down darn it!
