I have a couple of Campy G3 hubs off Zonda rear wheels. Can these be used with any other rims than Campy? For the price of a replacement Zonda rim I can just buy a complete wheel.

Lessee, a bit of googling shows those as being 24H front and 27H rear. The rear is probably possible to build up with a 36H rim, using every 2nd hole for the NDS. Depending on the exact drilling of the hub you might have to use a crow's foot lacing pattern. Expect to buy several sets of spokes before you get the length right.
A 24H front should build up easier to pretty much any 24H rim. Some spoke length tinkering probably required.

I don't have a good pic of the hubs,but are the spoke holes equal spaced, or are you going to have to use paired/tri spoke patterns? That may be an issue.

The rear hub is 21 spoke and they are NOT evenly spaced but use the Campy G3 pattern. There are 14 straight pull spokes on the drive side and 7 on nds. Frankly in looking at it I don't see how the straight pull spokes can be angled any different than they were in the stock G3 arrangement (7 groups of 3 spokes, 2 ds/1 nds) Just thought I would check here to see if anyone has seen/heard of one of these hubs being used in a different configuration.

OK, that was another combo than what appeared at ny first search. You should be able to keep the spoke configuration at the hub, and then use a 28H rim leaving every 4th hole empty.
From the rim's perspective the DS will be laced just as it always would be, and then you'd only use every 2nd of the spoke holes in the rim allotted for the NDS spokes.
It'll give you spokes grouped in 3s, with only a moderate angular difference in comparison with the stock lace pattern.
The front looks like it's got 16 spokes, that gets a bit more iffy. Best bet is probably to use a 32H rim. If you get one with a low profile you might get away with using every 2nd hole in the rim.
A high profile rim will give you a lateral lean in every 2nd spoke(which will be sitting in the wrong hole) that might give you trouble. Another option is to go for a really stiff rim, and lace it two used, two empty.
That'll get rid of the lateral lean for you, but give great chunks of unsupported rim. Should be doable though, if the rim is stiff enough.
But I gotta tell you, I don't mind leaving empty holes in the hubs much, but I wouldn't be entirely comfortable with leaving empty holes in the rim.
If you want to trade one odd rim for another, get a 48H and use every 3rd hole. Should come out nice and symmetric laced to a 16H hub.

I've tried one odd-ball lacing, a 20h hub to a 24h rim, lacing a 3spoke/2/3/2 on each side, mixing the 3 from one side with the 2 on the other. I had no trouble with lateral true, but:
Hoppity, hoppity, hoppity, hop. Every empty spoke hole. I was headed to a nice square wheel the higher I brought up tension.
So if you try this, make sure it is a nice high profile stiff rim. I was using a Velocity Aerohead which is only about 21mm tall.

A friend who dented both his Eurus rims (steel spokes) passed the wheelset to me. I got a front rim so I can replace that but the rear is unavailable.
I'm in the same boat for the rear rim - I'd like to have a matching rim, or a tall rim (60+ mm), but I don't think it'll happen with the spokes in there now. Not sure if I can swap spokes out, haven't looked at the spoke head configuration.
If I can get different spokes then I'll get different but matching rims.

The front is not an issue, both my hubs are the rear. Hmm, a 28h Velocity Deep V would match the existing profile and the front wheel that is still good. I know that's a stiff wheel, a little heavier but I don't care about that.
