Can anyone recommend a lightweight shoe or slipper, preferrably one that will fold and fit in my waterpack or shirt for when I want to take off the riding shoes and walk around a bit? Thanks in advance.

Why not wear mountain bike shoes and ride SPD type pedals. The cleats are recessed so walking is not a problem. The shoes look like sneakers.
If you are a woman, and you don't mind, they have a jazz slipper you can get from any dance store. It almost looks like a ballet slipper, except it laces up. It's black leather with a hard, but flexible and very thin sole. I sometimes wear it... very comfortable.

There are sandles which were used on the pool deck maybe two years ago. They were made by nike. They were almost as light as styrofoam, have one band across the top of your foot only, and would fit your foot when you put it on so well you could run in them. Check it out maybe. Sorry, I don't have a link
For this I will carry "water shoes". They are sold to wear to the beach or lake, etc. It's a rubber sole with a mesh upper. Lightweight and you can fold them.
