I recently tried putting a seven speed freewheel on an old Sunshine five speed hub. I had to add a spacer to the right side then managed to squeeze the result into the frame. The wheel wasn't centered. Not good! Are later, six speed hubs better suited to this swap or are they the same as a five speed hub?

There was ultra narrow 6 speed with the same spacing. later 6 and 7 speed was 126 spacing.
It sounds like the rim needs redished to account for the new axle length.

I have added a 6 and 7 speed freewheel to an original 5 spd hub. It didn't need any spacing or re-dishing. Just take care that there is some clearance between the cogs and frame. You shouldnt be too fussy about the chainline with this kind of upgrade.
I later swapped out the wheel for a Shimano freehub style 7spd, with a wider axle (130), and is fitted with a small amount of force.
