I was looking for wheelsets on CL and found nothing but Velocity "Deep V's", and some misc. items. Why? Are they terrible or underestimated? Makes me wonder, are people selling them, or trying to get rid of them? Is it just for the fixed gear phenomena or could it also be compatible with my 12 speed Nishiki?

They had a FG boom on Deep V's as the hipsters discovered them. They are a very strong wheel, though. I run them on my road bike and love them. 7000 miles and straight as an arrow, and I'm a heavy rider.

does your Nishiki have a freewheel or a freehub (cassette)? if the wheels being sold are QR you may be able to have the axle changed to make them compatible with a 6 spd freewheel. you would need to install a longer axle and some spacers OH a longer skewer too. then have the wheel re 'dished' to center the rim over the center of the axle.

does your Nishiki have a freewheel or a freehub (cassette)?axle.
I've got a 6 sp cassette just like u mentioned. I'll ask my local bike shop all the annoying questions (is it worth it, how much, any other reconmendations, etc.)
