Does anyone know where I can find training plans for brevet, similar to what
we find in Bicycling magazine for century ride plans? ie plans that lay out a plan
week by week, day by day for to prepare for various brevet distances. thanks

Here's how I did it ...

I rode 11 centuries and 3 - 200 kilometer rides over the preceding 7 years.

In the year I decided to start riding brevets ...

I gradually built up my distance as you would if you were going to do a century, and then ...
May 5 - 120 km
May 12 - 215 km (200K brevet)
May 19 - 120 km
May 26 - 323 km (300K brevet)
June 3 - 70 km
June 9 - 88 km
June 15 - 400 km (400K brevet)
June 24 - 86 km
July long weekend - back to back 80 km rides
July 7 - 600 km (600K brevet)

Plus shorter rides in between all that ... commutes, recreational rides, hill repeats, etc.
