Contact these guys. http://www.spacecoastvelosport.com/home.html If you make it as far south as Vero Beach (~1/2 hour south) there is a Tuesday ride that leaves JayCee beach 3:30 sharp. This is usually a very fast ride. Contact Bicycle Sport 772.569.5990 There is also a VERY fast ride in Palm Bay very crit like. See SCVS above for details.

These guys have a few group rides, and some maps of local routes on their site. The River road ride is a good one. The group rides it on Weds night and Sat morning. Route A1A south of Melbourne to Vero is also a good ride. And the Merrit Island Wildlife Refuge/Canaveral National Seashore is great low traffic riding.
