For a leisurely ride head south to the area south of Finch and between Yonge and Bathurst, we frequently cycle these streets including York Cemetery. I also depends on your planned distance but head east on Drewry/Cummer and pick up the bike trail system at Bayview. Earl Bales park offers some bike trails but the distances are really short so combine by cycling down Faywood from Finch and making a circle route.
On my rare visits, thoroughly enjoy the Don Valley Trail. Unfortunately my cousin's place is near the top, so return journeys from the Biggest Little Bookshop in the World mean standing astride the floor air conditioning vents is a considerable pleasure ;)

i live and ride in etobicoke and so i don't know specific paths in your area. perhaps this map will help - http://www.toronto.ca/cycling/map/index.htm. it does top out at steeles.
We recently googled bike paths in TO and found lots. There is one almost out our door at dufferin/eglinton that we explored and it is very nice.

The Humber valley in the West, across the waterfront and the Don valley in the East. For going into the country head up Weston rd to Holland Marsh.
