with all this training (about 5 years) and cycling I got my derriere musculature back. It dawned on me the other day when I walking. So what do I do with it? I'm not entirely used to having it. Feels like I'm 23 again!

Go out and play. It's what health is for.
Specifically, you could give rock climbing a shot (relies more on legs than one would think) or backpacking. Sport Tae Kwon Do maybe? It's all fun.
