I got a hold of some older Shimano 600 brake levers, year not sure model BL-6209. One of the levers is missing the "wire hook unit" where the cable end sits in the lever. would it be hard to find another one or are they universal?

I don't believe they are "universal" but try a couple of LBS's as they may have some spares recovered from take-off or damaged levers. Otherwise contact Shimano directly and they may send you one gratis. I damaged the same piece from an 8-speed 105 STI several years ago and Shimano sent me a free replacement.

can you post a pic of the lever and part? I have an old pair of RX100 levers around that maybe we can get the part from

I couldn't get a picture of the part but it looks sqaurish not a cylinder shape.

Those hoods clean up very nicely in mineral spirits, by the way.
