the way a ultegra brifter works (meaning the shift cable does not come out from the side of the hood ?)

STI refers to the combo brake/shifting stuff (SIS is just Shimano Indexing System, doesn't include brakes). Last I looked Campy had the better looking routing, but thought I saw newer DuraAce does have the aero cable routing. The new brifters are designed differently than the old.
I've seen it done in a half-assed way with Nokon housing.

The cable still comes out the side of the brifter, but loops in under the tape close to the forward curve of the bars.
I thought it looked tragic. A lot of effort and expense to achieve the goal of crappier gear changes.

My advice: if you want concealed cables, sell your bike and save up for a new one.

Agreed. Nokon housing is the only way I know of to achieve what you're after, I have it on one of my bikes for that purpose. However, it's expensive and so probably not worth it for the 8-speed equipment shown in the photo.
