Wasn't sure if this should go in Road or here, so here goes.
I'm looking to get a new road bike and found what I think is a good deal on CL. But, it's a 61 and I'm looking to get a 54. It then occured to me that I could buy this bike; get a correct frame, swap parts, sell the 61 frame and still be out ahead value wise.
So, what would be a fair consideration for a used '09 Ultegra gruppo?

Which ultegra is it? Look around internet dealer websites (nashbar/performance/probikekit/ribble/chain reaction), price out the same thing new and work from there.
Ultegra 6700 groups go for $870 on eBay NIB so a takeoff might fetch $800 for an auction. Ultegra 6600 maybe $600. You would also get more money splitting it up than selling it as a group, as the corollary is always true - that the cheapest way to buy a complete groupset is to buy it as a whole group.

isn't it pretty common for people to buy things such as old bikes or cars just for parts and then sell off the rest?

I do that all the time. Its a great way to upgrade a bike. Buy right, and you should be able to swap parts between the two bikes, and sell the donor bike with the lesser group for what you paid for it. So you could end up with a nice Ultegra upgrade for "free". This assumes you do all of the work yourself, and have all of the tools and time to do it.
I also routinely part out bikes. Depending on the components, the parts can often exceed the price of the whole bike. And then you still have a frame that you can sell/use or whatever.

It depends entirely on the condition of the group. In good condition, I'd say roughly $350.

You can search completed auctions, so that should help.
Other than that, from what I've seen lately (I'm looking to upgrade as well), I've seen used Ultegra 6600 groupsets going for a bit over $400. That's for brifters, derailers, cassette, cranks, brakes.
An even better deal is to buy a frame with components that fits you, then you just have to pick up the missing bits. That's basically how I got my second bike, a 54cm Aegis Victory frame with Ultegra group minus wheels and shifters, some SL shifters from eBay and some Mavic Elites from craigslist and I've got myself a nice 17.6lb CF bike for $1100.

I ended up passing on it; though someone else here seemed interested.
I'd best restate it, as a CX bike it wasn't a complete gruppo - brakes and crank were otherwise.
I'm still looking for my ideal deal.
