Mountain Biking - recommend a good mud shedding pedal

Bikeforums.net is a forum about nothing but bikes. I've been running 08 XTR pedals for the past 2 racing seasons. They are great when conditions are dry, but once I run up a hike-a-bike, or dismount in muddy conditions, they are a pain to clip back into.
Can you recommend some reliable pedals for muddy conditions? I weight 165lbs.
Thanks
I've heard egg beaters are the best.

The Eggbeaters work very well at shedding mud, the SLs and above are easily serviced too.

I'm another vote for the egg beaters. I got the cheapest ones as a gift a few years ago and have ridden a few muddy 24 hour races with no issues despite the fact I was covered in mud.

Eggbeaters are about the best mud shedders I have used- but closely followed by Shimano M520's--The cheapest shimano make.
Normal summer riding and I set the tension up very tight on the pedals- but winter and I slacken them off. I find it is not the pedals though- it is the small pebbles and grit around the cleat- not mud- that causes a problem. Not to the same degree but eggbeaters did not like grit either but they accept more crud than the 520's
But I have reverted to the M520's in preference to eggbeaters due to the feel of them. I know I have clipped in.

Eggbeaters, Time ATACs and Frogs all will shed mud well.
