just got some new 6700 hubs, do you think i should bother overhauling and greasing before i ride them, or are they good to go out of the box.

i adjust all new cup/cone hubs, while adjusting you can check for grease, replace if you wish.

Build them up and get them on the road!
Some say that that Shimano hubs come a bit tight out of the box and should be loosened up a bit but I say just ride them.

The hub is either adjusted properly or it's not. They typically come out of the box tight.

As far a changing grease on brand new hubs...don't have to - but if you want - go ahead.
However after riding the new hubs for 5-15 minutes, be sure to pop the wheels off and re-adjust. They do wear in a tad - that check is critical.

You need a tiny amount of play, which will disappear when you tighten the skewer.
If your hub bearings are too tight, your races will fail sooner or later.
Properly adjusted hubs of that quality should last at least as long as the frame.

Build up the wheels first then check the bearing adjustment. The stress on the hub will change the adjustment.
There should be a slight play in the adjustment that will go away when the quick release is closed,

Never noticed that... how about you set the bearings to just tight enough for zero play, build up the wheels, and re-check the bearings and get back to us?

No need to repack. Ride and readjust after 100-200 miles, they usually loosen up just a hair.

I will confirm this. The force of the spokes pulling on the flange *may* change the bearing adjustment.
Build up the wheels first then check the bearing adjustment. The stress on the hub will change the adjustment.

I assumed the wheel was already built, but you're correct at any rate. Hub is adjusted loose *after* the wheel is built. Or have fun truing it.
