So after almost any bike ride which involves inclines, when I get off my bike I feel alright, but I collapse half way to the ground uncontrollably and drop my bike. Extremely embarrassing, what should I do?
I eat a small meal before the ride's, so I don't think thats the problem.

Almost certainly postural hypotension:

Cool down with easy pedaling, even a few times around a parking lot, before dismounting.

If you aren't feeling light-headed or faint, it could just be muscle fatigue. I did a ride yesterday and the last 5 miles of light rollers I pushed as hard on as I was capable of doing. When I got back to the parking lot, I got off my bike, and I had to do the bent legged thing for a few seconds before I could stand upright and start putting my bike and gear away. Were you working really hard on the ride or just moderate exertion?

I was working pretty hard (for me) and I did not have access to water for 30 minutes prior to event in question. I felt pretty thirsty.

Ahhhh...proper hydration and nutrition is essential to a good ride. I know that when I get thirsty, I just feel my energy levels dropping and I start feeling physically unwell. For me, however, it is because I tend not to sweat fast enough when its warm out, so I drink drink drink, have a full stomach, and still feel thirsty because I am not getting the water into my system fast enough. Thus, I have to avoid temps over 90, basically, and even 85 is pushing it. But anyhow, next time make sure you are hydrated and properly fed for your ride, and I bet that you will feel better both during and after your ride.

I go a little nuts in the GYM sometimes and have to sit down to regain myself. for me a minute is all it takes, but I find it is best to be seated reducing the chance of falling

you're doing it right ;)... i almost fell down the front steps the other day ;)

I would vote against postural hypo myself... you'd feel the world closing in as a tunnel and definitely would have reported that
