I've been looking at replacement chainsets on some sites, and they have differing sizes (eg. 170/175mm), what is this the size of ?

It's the distance between the center of the bottom bracket axle and the center of the pedal axle :).

It's the length of the arm.

Your cranks should have a size stamped on them (backside sometimes) or you can just measure it with a mm tape.

Other dimensions to spec are the bolt circle diameter (smaller circles can accept lower gears), and the bottom bracket fitting: square taper Japanese or Euro, Shimano spline, ISIS spline.
