I'm wondering if I should buy one of those chain stay things, to keep it from bouncing about when I land from even like, a little jump or stoppie.
Is it bad for it to bounce up and down that much? It isn't as bad if I shift into a larger chainring both in front and rear, but it still moves a lot. Is it bad for the derailleur or the chain?

Nope, mostly just cosmetic damage to the chain stay. The neoprene ones like Lizard Skinz help reduce the noise though!
Worth it in my book!

Are you running 3 or 2 and what is the gearing. If for example you have 32 front and 32 back. Take out enough links to have the rear deraileur almost horizontal to the ground when in big big ring.

It's usually in 2-3 or 2-2, sometimes 3-1 but that makes the chain ride at an angle, so I don't know if that's good for it or not.
Would taking out links adversely affect the drive system during regular riding, not jumping?
Buy a floting jockey wheel or chain tensoner, i had this problem, so i bought one of these, i have three gears on front, and seven on rear, and this wheel works great! when i jump with the bike, the rear duralier stays still and hardly moves at all, and the chain stays still doent move either, going to get one for the top of chain tomorrow!
Cost about £14.

Ok are you talking about a chainstay protector, chain tensioner, or chainguide system?
A chainstay protector only prevents damage to the chainstay. A chain tensioner helps prevent the chain from smacking the chainstay. A chain guide helps prevent all of the above with the added benefit of keeping the chain from coming off the front rings.
If you are thinking about a chain guide system and you have more than one ring I would recommend the MRP LRP or the E-13 DRS. Of course it never hurts to have a chainstay protector I and most people use an old innertube. Cheap, effective and very quiet.

I just cut up an old tube and ziptied it around my chainstay to quiet the slap and to protect the stay from cosmetic damage.
I also run an MRP Slalom guide (single ring) and a short cage rear deraillieur...between those three items, my driveline stays pretty quiet.
