I had a 2002 Trek 1000, and saw a 2004 model, and there was no comparison. The 2004 was a totally different bike, and very much better. I saw one at the store yesterday, but wasn't sure if it was a 2005 or 2004, but it was a great bike to start out on. One thing you might think about is the 2004 model might be reduced in price to clear it out.

The '05 comes with a carbon fork as opposed to the aluminum on the '04. There are also some upgraded components.

The 05's are selling as fast as them come in according to the LBS that deals Trek around here. Some people are even having the shop order them for an extra charge. I went in and expressed some interest in seeing a 1000 from either 04 or 05 in my size and the owner ordered one for me on the spot at no charge thinking I would buy it for sure. I'll go back once it gets in and ride it regaurdless but I don't think I'll be buying it.
