I have a 92 Schwinn Paramount with a 7 speed drivetrane. My local shop doesn't have a 7 spd. chain. Can an 8 spd chain be used? Whats the difference?

I believe so. I have successfully used 8-speed chains (SRAM 800 series) on several vintage bikes with 6 and 7 speed freewheels (Suntour Winner Ultra). In fact, sometimes they are advertised as 6 - 8 speed chains. I have measured the 8 speed chains, and they have the same outer width as my old narrow 6 - 7 speed chains (Sedisport). Just make sure that you get a chain model that is meant for that brand / type cassette or freewheel. The plate contours can be different for chains meant for say Shimano Uniglide or Superglide or Suntour models.
6-7-8 speed chain is for most applications, the same animal.
