I rode 67 miles on Saturday on a fairly hilly route. I got home and was curious if I had lost any sizeable weight on the ride. Nope I gained about 8 or 9 lbs from the day before. I did eat quite a bit on the ride (fruit, trail mix and a piece of lasagna that the organizer provided at the end), but I doubt I would gain 9 lbs on Thanksgiving. Let alone after a 67 mile ride.

Body weight can fluctuate so much from day to day (and during the day) that it really isn't accurate to say that you gained the weight during the ride, or as a result of the ride.

Does seem a bit curious, though.

Did you weight yourself in the same state of dress or undress? Was it the same time of day? Did you drink a lot of fluids shortly before you weighed yourself? A lot of factors can affect what your scale shows.

While I don't know if it happens as quickly as what you experienced, I find that after a really hard effort, my weight can shoot way up for the next couple of days. It's almost like when you push yourself too hard, your body overcompensates and tries to store as much food and fluid as it can, in anticipation of another round of abuse. Either that or your body has to take on a lot of fluid while your muscles are recovering and making repairs.

My guess is the latter. Any time I've done anything really tough on a bike, such as a century, I add weight and feel bloated.
