my wife's birthday is this sunday and we are having a party. I have two grills at the house. one is actually a bbq pit and the other is a gas grill.

we will be having vegitarians over so they will get their own thing that I'm not concerned with.;)

but for the meat eaters, I'd like to cook something tastey on the bbq pit. no beef though. probably pork but maybe chicken.

something other then just basics food though, but I'm not sure what.

Suggest away!

viel, deer, fish.... plenty of non mercury filled fish... hatchery fish... mmmmmmm fish... but not with lemon!! why the hell much people put lemon on fish!!!??? put mushrooms on the fish... the glorious fish..mmmmmmmm... :D

actually, the hippie vegitarians will probably be eating fish. we have a giant chunk of salmon in the freezer we will probably cook up. giant.:)

but for the meat eaters, I'm thinking some real live(dead) flesh. you can't go wrong w/ pork. :D

probably not ribs though because they are too expensive for baby backs(the only ribs worth eating IMO)

Cant' go wrong with swordfish if you can afford it. Try a fish market in a ritzy neighborhood, ask them for the leftovers that are small pieces (Richies always want big steaks at an exact weight, so markets like the above have a lot of small pieces, sometimes you can get a deal) then make kabobs. Rub the sword with some lemon juice (fresh squozed) and some sea salt seasoning, then let it sit with lemon juice in the fridge for an hour or so. Heat grill to 400 degrees, 8 minutes on one side, 5-6 on the other, serve with lemon. Best fish you can buy.

Mako also makes a cheaper, somewhat grittier option, with similar taste and consistency.

the store two blocks from me sells live fish, frogs, turtles and whatnot for human consumption. yuck. :D

I'm thinking of something I can cook low and slow. the bbq pit, when used correctly, keeps the grill at about 250. I can raise the coals up for faster cooking but generaly use the gas grill for quick stuff.

I don't eat meat anymore, but when I did, I thought pork tenderloin was great. We used to cook it on a rotisserie, but I think you could make a rub and smoke it and it would turn out fine.

For the pescatarians:
Shrimp and vegetable kabobs are good on a grill.

Vegetarians:
Corn roasted in the husk over coals.
Portabella mushrooms.

Kids:
Marshmallows of course.

I cook alot on the grill. that's why I have two. :D

corn on the cob almost every other night.
pizza, tacos, whatever. I like to cook stuff that people wouldn't normaly cook on a grill.

I actually built a wood fired pizza oven for a guy at one point, in his backyard... he wanted to try it out and see if it would work in his restaurant. He treated us to the spoils after we finished it. Delicious.

Man, we've done a pork loin stuffed with cornbread that absolutely kicks ass. Can you seal that pit up & use some hickory or mesquite? The recipe was online somewhere. The first time I did it, I mismanaged the fire & the temp was too low, so it took forever. But the outside was crispy, almost carmelized & all the juices & flavor were sealed inside. My mouth is watering remembering it. Oh boy. I only used hickory that time - no charcoal at all; all wood. Can be tougher to manage, but its worth it.

I'm in charge of cooking tonight, but don't know if I want to spend the time for this treat.

wood/grilled pizza is the only way!

I am trying to figure out a good way to make a lid that will work/fit on the pit. for now I use a piece of galvenized steel that doesn't really fit or make a decent seal.

Why would they be eating fish if they are vegetarians?
I would suggest portabella mushrooms and bbq fruit, such as pineapple.
Even the meat eaters should like it. No need to cook any meat up at all! :)

I don't make up their rules. they call themselves vegitarians and they eat fish....

mushrooms are the worst thing in the world for food. I can't eat them. and I don't eat fruit of any kind.

I don't eat cow but I do eat chicken and pork. and that's about all I eat, asides from beans and rice.

You gotta get out the salmon.

For the vegatarians go get a bunch of anaheim chili's and smoke them on the grill till there skins are blackened. Then you put them in a plastic bag, you can tell the hippies it is recycled plastic :) for about ten minutes. Then you peel off the skins and cut off the stems. Roll them up in tortillas with some jack or cheddar or whatever you want and you got smoked chilies New Mexico style. Great stuff.

ok, this isn't working out how I had planned....

I asked about cooking MEAT. not freakin veggies.

the hippy/vegitarians won't leave my house hungry, but cooking for them is easy.
cooking for my meat eating friends is also easy, I'm just looking for something different.

by the way, Sunday I cooked Poblano peppers, Jalapeno Peppers, Tomatillas, Ahahiem(sp?) Peppers on the grill, pealed the skins, cut them up and made a green chilli. Yum!

I remembered I have about 8 poundsof pork shoulder in the fridge so I will probably cook that up. now I just have to decide how to cook it....;)

Grill up some lamb, use a very light garlic sauce if you want ot give it a nice flavor.

I doubt you can get alligator, but it's quite yummy.

Bison is quite good...although if they dont want beef its a bit beefy.

Bear meat is very gamey, but if you marinade it first works great on a grill, plus a good marinade can balance off some of that gaminess.

whole chickend, skewer them and grill em rotisserie style, then cut in half. use a raspberry balsamic sauce for brushing onto it, and serve it up with some garlice mashed potatoes...one of my favorites right there.

Cornish hens

I'm also a fan of shark. It's not like most fish, but you will most likely have to catch it yourself, so that can be a let-down.

You can BBQ my neighbors dog. I swear if that D*** dog doesn't shut up soon I'm gonna take a contract out on him! Mercy, I hate that dog. He barks for no reason, and at 7 o'clock in the morning. I don't HAVE to be up at 7. I don't WANT to be up at 7. But every morning I get the wake up call from the dog of my nightmares! If his owner weren't a cop...

Buffalo? It is pretty prevalent in MT, go figure, not sure about your neck of the woods. Tastes good and is leaner and healthier than cow.

Although brats are my favorite and easy to cook. But that's my WI blood talking.

Get a Boston Butt roast. One of the best parts of the pig (aside from bacon, of course). Put a BBQ dry rub all over it. Get the pit going at 250 deg and nestle that piece of swine ambrosia onto the cooking grate with indirect heat. Add hickory chunks soaked in water and wrapped in foil on the coals to provide smoke flavor. Let that pig lay there until he decides on his own to come to terms with destiny - about 9-12 hours. Good BBQ requires patience. Go do a century ride while the pig sits in the sauna.

Remove and bring the highlight of the party in to cool a bit, then pull it apart (it should not need slicing) and shred it with a couple forks. Serve on hamburger buns with plenty of BBQ sauce. A mustard based sauce will make bring tears of joy to your guests' eyes. Some cole slaw on the sandwich is the Memphis Way and will reform even the most die-hard vegetarian.

I'm getting hungry!

Don't leave the veggies out I ike meat, but this time of year with fresh veggies from the garden I grill stuffed hot peppers, tomatoes, squash, eggplant along with the deer or whatever else I'm eating.

Peppers stuffed with garlic, onions, and cheese with a little sherry.
Squash with vinegarete salid dressing or garlic and molassas
use sherry on any of the meat too as well as whatever spices you like
Chicken, duck, goose, rabbit are all good grilled squrrel is too small.

Has anyone tried ground hog I haven't, but I'm dieng too?
