I just realized that my bike specs out to non-standard (italian dimensions). My handlebars are 26.0mm instead of 25.4mm (1 inch). Will bar end shifters work if my handlebar tubes are bigger than normal?

There is no standard or normal, except that the industy currently tends to use 25.8 and 26.0 in non oversize bars Bar ends fit 25.4, 25.8,26.0 and 26.4, 31.7 and 31.8 drop bars.

The 26mm measurement is the bar/stem clamp diameter only. The rest of the bar is smaller diameter tubing. Bar end shifters will fit, regardless of bar manufacturer. They use expander bolts to grab the inside of the bar ends.
