My 20 year old daughter just came back from a vacation in Europe and told me the highlight of the trip was riding a bike in Amsterdam. I was checking out the place they rented from...
I guess I just assumed classic Dutch bikes would be the bike of choice and priced accordingly.

You assumed right :)
It says right there on the site "CITY BIKES from €6,50 for 3 hours".
If you look at the picture next to that sentence, you will see that it is not what you call a "city bike" ... but a typical classic dutch bike.
I live in Belgium and we speak about the same language as in Holland.
What you call a "classic dutch bike" ... we here simply call it "een stadsfiets" ... this type of bike existed years before the newborn mountainbike derived "city bike" arrived and literally translated it also means "citybike" because it was intended as a bike to do daily commuting in the city :)
So we here have both "stadsfiets" and "citybike" ... which literally mean exactly the same thing, but refer to completely different types of bikes ... it's silly I know ... but language isn't allways logical ;)

It's nice to see the hybrids called "luxury 21 speed" bicycles...seems like they are appreciated. :)
