I have put together a low center-of-gravity trailer to tow for touring. Started with a 'canoe carrier', inverted it, narrowed it, and used a one-wheel trailer for a 'load bay'. Made a hitch with a 'Buddy Bar' I modified to hook up to my bike.

This is discussed extensively over in the Utility forum. In a general sense, I think the best "bang for your buck" is a garage sale kiddie trailer with an upgraded bed and hitch.
