for cantilever brakes, the center part. where to buy these? I just checked everyone...

A 'stay' is the cross bar in the frame, reinforcing between 2 tubes or blades, there is a seat stay,
it is what the brake is mounted to. it is part of the frame.
and there is a chain stay, it is close to the bottom bracket shell , ahead of the wheel.

So I don't know what you are asking.

between the cantilever brakes there is a cable that pulls both inward
when the cable is pulled Up.

Be aware they come in different lengths.

The crossing wire is the straddle or yoke wire, and comes either double ended in a variety of lengths, or single ended for brakes where one arm has a pinch bolt. The triangular piece that attaches to the main wire and supports the yoke is called a yoke cable carrier, sometimes shortened to just yoke carrier.

Note, many more recent canti's use a different arrangement where the main cable runs past a linkage unit down to one arm, and a short double ended link cable goes to the other arm.

All of the stuff is readily available at any LBS, or most of the internet suppliers.
