We are signed up Levis Granfondo out of Santa Rosa October 9th. This century will be hillier than we are used to at 8500 feet and due to the nature of the ride I think we will want to ride a bit more aggressively than most centuries we do. We have about 2500 miles in this year including 6 centuries, a couple of the centuries have had about 6500 feet of climbing. We are comfortable climbing and do not shy away from many climbs here in the bay area but I would like to try and improve our speed. (I am more likely to pass on a tandem climb because of the decent then the ascent.) We ride or 2or 3 nights a week and can ride on both Saturday and Sunday.

Can anybody offer any tips on training for tandem riders? Has anyone used any of the online coaching programs and tried to it for a tandem pair?

The stoker does not ride a single so all training is on the tandem. Captain has done the Deathride a number of times and many of the other hilly rides in Northern California.

Throw a set of panniers on back o tandem. Load them up with about 20 lbs of books and go do your local hills.

There are some decents on this ride that are steep. Not my favorite 2 up.

Other than Zonatandem's fine suggestion. :) I'd suggest that you just train on the tandem the same way you would if you were on the single. Incorporate some speed and climbing work into your weekly training rides. You don't need to do anything special.
